Chemical Composition of Oriental Beechnuts (Fagus orientalis Lipsky.)

Abstract

Oriental beech (Fagus orientalis Lipsky.) is one of the important tree species in Turkey. Chemical composition of seeds may give clues about the seed physiology. In this study, chemical properties and fatty acid composition of oriental beechnut were investigated. The study was carried out on four origins (Dokurcun, Giresun, Yozgat, Kahramanmaras). This study showed that oriental beechnuts contain 48,69 % lipids, 29,04 % protein, 3,16 % starch, and 4,10 % ash (dry weight) in average. 88,44 % of the lipids of oriental beechnut was unsaturated fatty acids. Oleic acid (40,42 %) and linoleic acid (34,98 %) are two major fatty acids in lipids of beechnut.

Doğu Kayını (Fagus orientalis Lipsky.) Tohumlarının Kimyasal Bilesimi

Abstract

Doğu kayını Türkiye’deki önemli ağaç türlerinden biridir. Tohumların kimyasal bilesimi, o tohumun fizyolojisi hakkında birçok ipucu verebilmektedir. Bu çalısmada Doğu kayını (Fagus orientalis Lipsky.) tohumlarının kimyasal bilesimi ve yağ asitleri kompozisyonu arastırılmıstır. Çalısmada dört orijin (Dokurcun, Giresun, Yozgat, Kahramanmaras) kullanılmıstır. Genel ortalama olarak Doğu kayını tohumu % 48,69 yağ, % 29,04 protein, % 3,16 nisasta ve % 4,10 kül içermektedir. Yağın % 88,44’ü doymamıs yağ asitlerinden olusmaktadır.
Oleik asit (% 40,42) ve Linoleik asit (% 34,98) en fazla bulunan yağ asitleridir.
